The latest official Windows 7 Beta build is 6936 which contains a new desktop wallpaper. This wallpaper is quite similar to the previous one included in beta build which was shown at PDC 2008.

That particular fish is called a Betta or Siamese Fighting Fish.
I guess it's a play on words since Windows 7 is still in beta.
